Our food journey has been a long one. With a family fun of runners, large and small, we consume a lot of food. We were convicted, through a series of severe illnesses, that we must change the way we eat in order to survive. Along the way, we found wonderful, new, yummy foods we didn't know existed. Here are a few of our favorites.
1. Greens - o.k. I'll admit it. I did not know there were so many different kinds of lettuce and greens to eat. Really, I didn't. The wealth is un-ending! How could I have missed it! We now enjoy collard greens, kale, arugula, swiss chard, parsley, chives, dandelion greens, and any other edible green we can find. Having gone off sugar, all of these have a new and very satisfying flavor!
2. Kefir - Again, I was very cautious. I read tons about the benefits of kefir and thought it was crazy. I tried the store-bought kind and loved it. Then, I finally ordered kefir grains and found it was easy. I know, one more thing doesn't sound easy. But I cannot even keep aloe plants alive, but I can do this. Pour in milk. Leave it alone. Stir or don't stir. Eat it.
So yummy and builds the immune system. Literally, I believe these two items have brought much needed nourishment to our bodies and our colds have been greatly diminished in winter. I believe that God has placed food on the earth that is for our healing. We just have to be open to where He is leading and wise about what we put into our mouths. Our rule in our house is if we do not know what the ingredients are, we do not eat it. My oldest little runner frequently polices my cart, "did you read the ingredients on that!!" It is actually very helpful to simply read it and only eat it if we know what it is. This has led us to only eat "real" foods mostly one ingredient and alot of quick, easy, raw foods.
